Bacon Wrapped Chicken Pieces


Okay so it all started out innocently enough. It is the third of july and I have a refridgerator filled with meat. I figure, let’s eat light and make our way into the 4th of July with ease. What menu did I choose?


Leg N Thigh chicken pieces wrapped with applewood smoked bacon. That made perfect sense. Sure we’d have a vegetable with no starch. That’s good for you. But the later it got, the more I started wanting some starch. So I did up some sticky japanese type rice. Oh man, a little butter, salt and pepper we were set! And as the rice was cooking I’m looking dead on at the roasted chicken parts wrapped with bacon dripping slowly into the pan and glazing nicely. I was screwed. I pulled the chicken parts when they were done, set them aside and coveredly lightly with foil. Then I diced a shallot neatly and tossed into a few tablespoons of fat with fond. After the shallots were greasily drunken, they got a tablespoon or two of flour and browned a bit. One should always toss in some booze, so I located some fancy port wine and doused it. The flour sucked it up and the alcohol wafted away. Then a bit of organic chicken broth to make it plenty liquidy. Salt and pepper to taste and POW POW!!! A bit of butter to glossen out the sauce (that’s a fancy term for GRAAAAVY). Simmer to reduce and thicken a tad.
Pour over all and everything on all sides. That right there, is love.
