Wild Mushroom Crepinettes – Fatted News


Uh, ya know, I may be cutting my own throat here, but getting to the Berkeley Farmer’s Market at 10am could be too late. Sure they open at 10, but when I got there last week at 9:53, Taylor had already sold out of the Sugo Di Carne (meat sauce). So, now that he has his Wild Mushroom Crepinettes listed, I would have to say getting there by the time he is supposed to open might be a little late. Maybe 9:30 or so? I know this week I WILL come away with the Crepinettes, Sugo and some of the Saucisson Sec.
I for one, would like to see the Wieners with Wild Mushrooms. Yes.

Do you ever get tired of these little missives beginning with a question? No? You think it?s a brilliant literary device? You think it?s literary? Well, we?re a little tired of it, so we?d like to officially start this week?s newsletter with a statement: Wild is better. Bergman knew Wild Strawberries were better. Martha Stewart knows wild roses are better. And it seems like a bunch of people who watch late night TV think Girls that have Gone Wild are better. Wild is harder to find, tastes better, is rare and unusual, and hard to get. (Except, apparently, for those Girls) What concerns us today, though, is wild mushrooms, and how you will be, well, wild about them in this weeks? crepinettes. Taylor really has a knack for matching the best goodies with the flavors and textures of meat, and he has once again topped himself by finding some really unusual mushroom varieties for the sausage. It?s a little too soon to know for sure, but we?re betting some wild herbs will be involved, too. Other wild possibilities include Wild Wieners, Tonno di Maiale, Ham Hocks, and the return of the much photographed, lauded, and popular Saucisson Sec. See you at the Market!
