The weather around here has been pretty darned wet the last few days and it doesn’t look to clear up anytime soon. Our little house gets even smaller this time of year, smaallll. Last weekend I picked up some of Fatted Calf’s Mortadella, bordelaise sausage (new favorite) & some duck demi glace. Such a treat on these nasty nasty days. The wafty sizzles of bright happy sausages coming from the kitchen make the days quite a bit brighter. The creamy warmth of a piece of sausage lolling about in your mouth brings a wide grin each time. The spine tingling thrill of opening the carefully wrapped gifts and gazing upon the glistenny meat loves is just too much to bear. You must leave your hovel and sally forth and git yerself some. Even if it’s cold, even if it’s raining and especially if it’s snowing out. Who wants to be snowed in without fresh sausage? Not I. You go.

How do you feel about trying to get through late January and early February? Well, we at Team Fatted Calf have mixed feelings. Let‚s face it, it‚s a relief to have the holidays over, but WHAT is there to do now? Feel sad about the election? Send $200 to Southeast Asia? Try to remember those New Year‚s resolutions to pay bills on time and go to the gym? Be sad about Valentine‚s Day, for God‚s sake? (Please, please don‚t be) Blech. We‚re trying to get through this yucky time by planting bulbs, reading good books (Don Delillo anyone?), and counting our blessings, as hokey as that sounds. And, um, there is one more place that we can find comfort in this dead zone of a time: Our own meaty goods, in front of the fire or a great movie. Toulouse sausage confit, fried potatoes and frisee salad. OR, perhaps some stuffed quail and sauteed greens. It‚s raining out, and no other excuse is needed to stay warm indoors.
Last Saturday, Fatted Calf ran out of ALL meaty goods by 1:00pm.-but never fear, that won‚t happen again this week-we will be stuffed to the top of out tent with everything to help you through Œtil Spring.

Thanks for the kinds words, hey.
The Crepinettes are amazing no matter what’s in them. They’re really cool to watch cooking/grilling. The little guys puff up and get all airy, like pork clouds. That caul fat really dials it in, crazy stuff.
As far as I know, Taylor is only making them locally. I’ve talked to him several times about shipment of goodies. I believe there are two concerns he has, first of all is quality. To ship would mean to freeze and frozen meat ain’t right. The other concern is that the Fatted Calf is still a small company and ain’t set up for shipments yet.
I don’t know of anyone else making Crepinettes or anything close.
