Pork Chop dusted with Wondra flour and shallow pan fried to a crispy & juicy finish. Been experimenting with the Wondra, so far excellent results.
Yay for Duck Crepinettes. I’m also intrigued by the quail stuffed pork, chard & white wine sausage. I ain’t never had no white wine sausage before! Be it veal? Pork? Pork & Veal? I dunno, yet.
Take note, I see pancetta listed there. You’ll need some of that. Surely. The weather is bitchen’ and it’s time to get out and go some place fun. Go!

Ahhhh, Valentine’s day. Or is it, Blehhhh, Valentine’s day? We have mixed feelings. On the one hand, some Valentine cards are pretty, and how often do you get cards any more? On the other hand, why wait for a sanctioned holiday to show your admiration? It can be tough, because sometimes we see our single friends, people who are normally just fine with being single, feeling a little bit bad around V-day, like they should have someone to share champagne with and receive price-inflated roses from. And the coupled? Nothin’ but pressure, man. Who has the affordable price-inflated roses? How can I get reservations for a not-as-good-as-it-usually-would-be-restaurant-meal, surrounded by other sheepish, too dressed up, trying-to-be-romantic couples? Jesus, could they put truffles or sprinkle rose petals on one more thing? We once made plans for a blind date, not realizing it was V-day. Talk about pressure. Talk about Bleh. Here’s an idea: a card any time of year, any time you think about it. Garden roses, warmed by the sun, and-wonder of wonders, actually fragrant! Here’s Toponia’s idea: (and, no, sorry Poni, we aren’t going to use Liver For Your Lover. Umm, maybe next year.) Go bird hunting. And by that we mean, on Saturday morning, have a hearty breakfast, put on some sunscreen, and head to the Berkeley Farmer’s market, stop at the Fatted Calf Stall, and avail yourself of some Duck Crepinettes with Picholine Olives and Thyme, a couple of Quail filled with chard and White Wine sausage, and some Guinea Hen Terrine. And, if truffle you must (and really, who’d complain?), we just happen to have Truffled Sausage Confit. Prepare to fall in love; lover optional.

Okay, so I’m curious about that pork chop. It’s beautiful! What’s Wondra flour? And is there a recipe that goes along with that pork chop or is it just a simple egg / flour dip and then into the frying pan?

Instant flour is a low-protein, pregelatinized wheat flour to which some malted barley flour has been added. It has been formulated to dissolve quickly in either hot or cold liquids, and is most often called for to thicken gravies and sauces. Because of its low-protein content, it is also sometimes used in making pie crusts and other recipes that call for cake flour, which is also lower in protein than all-purpose flour. Some bakers find the slightly acidic taste of cake flour objectionable and prefer the instant flour. Two of the leading brands available in this country are Wondra and Shake & Blend.
The upshot is the stuff REALLY TASTES GREAT when you coat meat with it, then pan fry. WONDERFUL CRISPY HAPPY.
I have to admit, I use a secret weapon in shallow frying meat. I use a solid copper, tin lined fry pan. Although a nice cast iron pan will do very well, der.
No salt, no pepper, wondra only.
However the egg wash & wondra would ROCK !!! I’m just lazy and tired. Sometimes. Great for a tuesday evening meal.
Look for a round 10″ tall blue container. I haven’t tried it for pan sauces or gravies yet. I’m collecting images to put together something for Meathenge.

Thanks for the info! I looked for Wondra at QFC on my lunch break, but no luck. I’m going on a hunt this weekend though, because I WANT TO EAT THAT PORK CHOP!
