Pork Crepinettes with Roasted Shallots, Parsley and Walnuts – Fatted Calf News !


Most outrageous Tri-tip roast I’ve seen in years. It was huge, about 4 pounds and the other side is a nice plate of fat! Absolutely amazing buttery flavor after 3 hours of slow hickory smoking. I was perusing Rick’s Quality Meats in El Cerrito, attempting to buy some pork. My head literally snapped about when I sawr it in my periphery, *SNAP*. Just like that. “I want that!” Said Biggles in the form of a spoiled 4 year old. MmmMMM, spicy.
Let’s see, where was I? Oh yeah, Fatted Calf is sportin’ Pork Crepinettes with Roasted Shallots, Parsley and Walnuts this weekend! Makes me giggle. The special though are the Hoffman Farms Quail stuffed with Pork Sausage and Full Belly Chard. I ain’t never heered of Full Belly Chard, but then it ain’t meat and I’m not surprised.
I noticed they’ve got the Bordelaise sausage this week, I can’t stress enough how delightful it is. If you’re wanting something a bit different, try the Merguez. It’s a highly spicy lamb sausge in smaller casings. Perfect for a little grilling action, but be gentle. Taylor’s sausages are frightengingly fresh and cook quickly. Yum. If cooking ain’t yer trip, try some of Toponia’s Jambon persille. It’s a bright ham terrine thingy. Slice a slice on crusty bread for snack, makes you smile. You bet. Get out this coming Saturday and go have some fun, support your local producers.


Ohhh, where to start, where to start? Actually, we really don’t know where. Sometimes, when we get the menu, and plan our little newsletter plan, it can be a little overwhelming. So. Many. Good. Things. Must…focus…..
So. Let’s cut to the chase. This week when you visit the Fatted Calf stall, would like to challenge you to mix it up a little. We worked there, you know. We know there are lots of people who get the same thing every week. We saw someone almost cry last Tuesday when they learned we were out of Boudin Blanc. And walk away! Meat-less! Come on, now. There are 25-some-odd choices on our menu this week, and OK, you can get the Breakfast sausage if that’s what you always get, or the Merguez, but we want you to get something else, too. Something you have never had before. Shying away from Crepinettes? For shame. They are little pillows of sausage garnished with whatever is perfect and in-season, and they are oh-so-worthy of your attention. Fear not, saute as you would a traditional sausage, and enjoy. Fegatelli? The richest, most aromatic little dry cured salami ever. Try one. You’re sure to try another after that. Guinea Hen Terrine, Rillettes, Hoc ks. Have we ever steered you wrong? We sure hope not.

Now Sarasota can’t really compete with your town, but if one doesn’t want to shell out the dough at Whole Foods here there are some great little ethnic markets around that sell all kinds of cuts that you can’t get elsewhere. And for cheap! You’d be impressed by the hispanic market my friend nick introduced to me today. They have beef short ribs for 99 cents a pound! A whole chicken for 99 cents a pound! And they sell ENTIRE PIG HEADS! Got any recipes for that? Huh? Do ya? Do ya?

  2. Hmmm, a recipe? AAHAHHAHAHHAHHA, no.
    Yeah, I love our local markets here. I’m a few blocks in 3 directions with great little Mexican markets. Many people from El Salvador have been moving in too. Fresh cactus paddles and walls of dried chiles. And Bimbo bread! They’re one of the few places I can go to get really fresh tomatillos, shallots & cilantro. Yes, that’s right, shallots. Oh and the onions ROCK. Eeek, I almost forgot the limes! FRESH LIMES !!!
    Hey Sarasota must have some GREAT fruit though, I would think. Whole pigs & fruit, now that’s the life.
